Chung Hom Kok peninsula offers an easy coasteering route, a trickier dry scrambling version and tons of peculiar rocks around.

Big Wave Bay beach, apart of surfing and couple of coasteering routes (from Chai Wan or to Shek O), offers several streams around. Relatively short jungle-like.
Sung Kong has nice coasteering with less distinctive features. Waglan is small but has interesting rocks, an arch, and the old constructions around the lighthouse.
I wrote some time ago about the most known streams heading to the Peak area, here several more in the vicinity, a bit less known.
I was trying to find a fun way to go to the Penis rock, but this Loi Po Sai stream (女婆西坑) is not especially interesting. Only recommended for those trying to conquer all streams in HK.
The more you hike in the less “civilized” paths the more chances you have to see the real natural Hong Kong, including snakes, wild boars, etc.
The Kumano Kodo are the ancient pilgrimage routes in the Kii peninsula (Wakayama Prefecture). El Camino de Santiago Japanese style.
Double Dragon stream (雙龍石澗) is another interesting way up to Sunset Peak. First section with several pools to dip into. Second section with the best waterfalls.
